Crispy Hot Wings

Nothing beats a portion of delicious hot wings with a side of punchy bacon & blue cheese sauce. Chicken wings are cheap, tasty and addictive, and you can serve them as a side or a profit-making meal deal.
With the Alpha Coater, this recipe couldn’t be any more straightforward. And, if you want more heat, you can simply add some extra hot sauce or cayenne to the mix, or toss your fried wings in some more hot sauce.
CHEATS
Buttermilk: Because of its slight acidity, buttermilk tenderises the chicken without becoming tough and chewy. Using buttermilk also helps the chicken go nice and flaky when you dredge it through the Alpha Coater.
Ceres Alpha Coater: The Ceres Alpha Coater uses very specific starches with a high amylase content. Fried food gets very, VERY crispy in the right conditions without getting too technical. Remember, it is allergen-free so that everyone can enjoy these crispy hot wings.
WHAT YOU WILL NEED TO MAKE YOUR CRISPY HOT WINGS
Ingredients | Quantity |
Chicken Wings | 2kg |
Buttermilk | 300ml |
Franks Hot Sauce | 100ml |
Cayenne Chilli Powder | 20g |
Ground Black Pepper | 10g |
Alpha Coater | as needed |
Liquid Oil | as needed |
MAKING YOUR CRISPY HOT WINGS
1 - Mix the buttermilk, Frank’s Hot Sauce, Cayenne Chilli Powder, Ground Black Pepper and 50g of Alpha Coater and add the chicken wings. Mix well and leave overnight in the fridge for at least two hours.
Pro-Tip: If you can leave your chicken to marinade for 24 hours, you will increase flavour, and your chicken will be more tender.
2 - Dredge Chicken Wings in the Alpha Coater.
3 - When you are ready to fry, preheat the fryer to 170°C.
4 - Deep fry until above 75°C or until crisp and golden brown.
5 - Remove, shake off and serve.
