Nashville Hot Fried Chicken

Although I have never been to Nashville, hot fried chicken is one of my favourite foods. The chicken is perfectly seasoned and breaded to create a crispy shaggy crust, then basted with Nashville hot sauce for fiery but sweet heat and delicious flavour.
Nashville hot chicken is fried chicken, but with a fiery difference. The perfectly fried chicken is tossed in a spicy sauce with a generous amount of cayenne and black pepper.
Want it hotter? Just boost the cayenne and black pepper to increase the heat!
Traditionally, Nashville hot chicken is served with sliced white bread and pickles. Why not make a meal by adding chips, fries, coleslaw, sour cream, and chive dip?
Cheats
Buttermilk: Because of its slight acidity, buttermilk tenderises the chicken without becoming tough and chewy. Using buttermilk also helps the chicken go nice and flaky when you dredge it through the Alpha Coater.

Hot Sauces: We have listed Franks Hot Sauce and Tabasco Sauce for our recipe, but feel free to swap and change for your favourite sauces.
Rice Vinegar: Rice Vinegar will give you a sharp boost in flavour; the Nashville sauce wouldn't be the same without it.
What you need for the Nashville Fried Chicken

Boneless Chicken Thighs | 2kg |
Buttermilk | 300ml |
Tabasco | 3 tablespoons |
Franks Hot Sauce | 6 tablespoons |
Alpha Coater | 100g |
Cayenne Pepper | 25g |
Liquid Oil | as needed |
What you need for the Nashville Hot Sauce
Ingredients | Quantity |
Cayenne Pepper | 2 tablespoon |
Brown Sugar | 4 tablespoons |
Ground Black Pepper | 1 teaspoon |
Garlic Granules | 4 tablespoon |
Tabasco Sauce | 5 tablespoon |
Franks Hot Sauce | 100ml |
Rice Vinegar | 100ml |
Salt | season to taste |
Liquid Oil | 100ml |
Method
1 - Mix the Buttermilk, Tabasco, Frank's Hot Sauce, 100g Alpha Coater and the chicken and leave overnight in the fridge or at least for at least two hours.
Pro-Tip: If you can leave your chicken to marinade for 24 hours, you will increase flavour, and your chicken will be more tender.
2 - Drain the chicken pieces and dredge in the Alpha Coater.
3 - Add all the Nashville hot sauce ingredients to a saucepan and simmer for 4-5 minutes until the sauce is nice and smooth.
4 - When you are ready to cook, preheat the fryer to 170°C.
5 - Deep fry until above 75°C or until crisp, golden-brown and cooked.
6 - Remove, drain and toss into the Nashville hot sauce and serve.
