Richard Caring Tests New Waters with Bill's Café & Bar Initiative

Richard Caring is embarking on an exciting venture to gauge interest in a new café bar concept derived from his successful casual dining chain, Bill's. This innovative pilot aims to establish a national chain of Bill's Café & Bars, starting with openings in Newbury this weekend and St Albans in the coming weeks. These venues will offer a curated menu featuring signature Bill's dishes, a range of sharing options, and an assortment of cakes, pastries, draught beers, and hot beverages. Patrons will have the flexibility to order from the comfort of their table or directly at the bar. Success in these initial locations could lead to a nationwide expansion.

This strategic move mirrors Caring's prior triumph in transforming The Ivy in London into a widespread collection of café and brasseries, indicating a promising outlook for Bill's Café & Bar. This initiative follows a period of significant growth for Bill's, which reported a record £92.6 million in sales across 45 restaurants in 2023, marking a 4.6% increase from the previous year. With profits soaring by 45% to over £8 million, the brand attributes this success to increased customer visits and operational efficiencies, partly credited to a new management team's diligent cost management and restrained menu price inflation.
Bill's roots trace back to 2001 when Bill Collison founded it in Lewes, East Sussex. From a humble greengrocery, it evolved into a beloved café and, at its zenith in 2018, boasted 81 locations. However, recognising the need for rejuvenation, Caring scaled the chain back, refining its focus and setting the stage for this bold new direction. The forthcoming café bars, complete with terraces for morning or evening refreshments, represent a pivotal step in revitalising and expanding Bill's brand.
Caring, who also has interests in the Caprice and Birley groups, shares his optimism for the café bars, viewing them as a significant opportunity for brand growth and innovation. Meanwhile, The Ivy Collection, part of his portfolio, is reportedly on the market with a valuation of up to £1 billion. However, this ambitious figure presents its own set of challenges, according to industry analysts.
