What You Need
Ingredients | Quantity |
Natural Batter Mix |
1kg |
Buttermilk | 1200ml |
Blueberries | 500g |
Eggs | 6 |
Unsalted Butter | 100g |
Vanilla Extract | 1 tsp |
Maple Syrup or Golden Syrup | As needed |
Method
1. Place the Natural Batter Mix, buttermilk, eggs, melted butter, and vanilla into a large mixing bowl and whisk it well.
2. Preheat a 20cm/8in a frying pan over medium heat, adding a smidgen of butter. Pour in approximately one and a half ladlefuls of the batter, followed by a hearty sprinkling of blueberries. The batter will naturally envelop the berries as it cooks. Once the underside has achieved a beautiful golden-brown hue and feels firm enough to turn (having cooked more than halfway), flip the pancake and allow it to cook for another minute. Once done, transfer it to a serving plate.
3. Continue this process with the remaining batter and blueberries.
4. To serve, accompany these sumptuous pancakes with a touch more butter, a sprinkle of blueberries, and a drizzle of maple syrup. If maple syrup eludes you, there's nothing more British than a good drizzle of golden syrup to round it off perfectly.
Incorporate these into your menu and prepare for a flurry of compliments from your delighted customers. Cheers!
