These scrumptious filo treats are crispy, cheesy, and ideal for serving at any festive gathering.

Why Choose Brie?

Known as the "Queen of Cheese," Brie is one of France's most iconic contributions to the dairy world. The cheese is wonderfully complex, especially when allowed to mature to a slight brown tint. Crafted from whole or semi-skimmed cow's milk and aged for at least four weeks, Brie is characterised by its pale colour and subtly varying flavours.

The Wonder of Filo Pastry

Light as air and effortlessly flaky, filo pastry is your go-to for anything from samosas to baklava. We have an incredible range of filo pastry ideas that extend to traditional pies and tempting desserts.

Why Cranberries at Christmas?

Though cranberry sauce only became a staple in British Christmas feasts in the 21st century, it's been a classic in America since at least 1796. The sauce is a delicious turkey accompaniment and highly versatile; you can use it in pies, scones, and even as a glaze for meats.

Method

  1. Add the cranberry sauce, honey, and cranberry juice to a saucepan and simmer for 10 minutes. Bottle the sauce or portion it into dipping pots.
  2. Lay out your stack of filo sheets on a board with the longer side facing you.
  3. Dice the Brie into small, bite-sized pieces mixed with ricotta and cranberry sauce.
  4. Gently unfold a sheet of filo pastry and brush it with melted butter. Layer another sheet on top and touch it as well. Add a third layer and repeat. Cut these into four equal rectangles.
  5. Place a dollop of diced Brie and a teaspoon of cranberry sauce at the bottom of each rectangle. Fold the sides inward and roll up the pastry tightly.
  6. Place your assembled filo parcels on a baking tray lined with parchment paper, seam side down. Continue this process until all your ingredients are used up.
  7. When ready to serve, fry the parcels at 175°C for 2-3 minutes until golden and crispy.
