What You Need For The Fried Brie & Cranberry Filo Rolls

Ingredients Quantity
Filo Pastry Sheets 1kg and more as needed
Ricotta 1kg
Butter, melted 500g
Cranberry Sauce 500g
Brie, diced 500g
Dried Cranberries, chopped 200g

What You Need For The Drizzle or Dip

Cranberry Sauce 500g
Honey 2 tablespoons
Cranberry Juice 100ml

Method

  1. Add the cranberry sauce, honey, and cranberry juice to a saucepan and simmer for 10 minutes. Bottle the sauce or portion it into dipping pots.
  2. Lay out your stack of filo sheets on a board with the longer side facing you.
  3. Dice the Brie into small, bite-sized pieces mixed with ricotta and cranberry sauce.
  4. Gently unfold a sheet of filo pastry and brush it with melted butter. Layer another sheet on top and touch it as well. Add a third layer and repeat. Cut these into four equal rectangles.
  5. Place a dollop of diced Brie and a teaspoon of cranberry sauce at the bottom of each rectangle. Fold the sides inward and roll up the pastry tightly.
  6. Place your assembled filo parcels on a baking tray lined with parchment paper, seam side down. Continue this process until all your ingredients are used up.
  7. When ready to serve, fry the parcels at 175°C for 2-3 minutes until golden and crispy.
