Never leave the frying range unattended during the boil-out process. If you need to step away, switch off the pans using the controllers.

Step 1: Heat the Oil

Switch on the frying range and heat the oil to 60°C to 80°C, depending on your specific oil or fat. Once you reach the target temperature, turn off the pan and wait for at least 10 minutes to allow the residual heat to dissipate.

Step 2: Drain the Oil

Open the black drain valve and use the pump (green handle) to transfer the oil into suitable containers via the filtration exit hose. Wait until the oil cools down to below 48°C to avoid the risk of burns.

Step 3: Add the Ceres Deep Fryer Cleaner Solution

Add the 500g of Ceres Deep Fryer Cleaner to water that's above 80°C. Use fish utensils to stir the mixture as you pour it into the pan.

Note: While boiling out, ensure the water level stays above the minimum oil line. If needed, top up with freshly boiled water from a kettle.

Step 4: Boil Out the Pans

Let the mixture simmer in the pans, ensuring you don't leave the frying range unattended. To turn off the frying range, hold the on/off button, and for timers, use short presses on the same button (applies to Argus Controllers). Keep holding the on/off button until "Off" appears on the screen.

Step 5: Allow the Pans to Cool

After boiling out, let the pans cool down for approximately 30 minutes or until the temperature reaches 40°C.

Step 6: Remove Deposits and Clean the Pans

Once the pans have cooled down, remove loose or hard deposits using a scratch-free scourer or scraper. For chip pans with heat exchangers, use a brush to reach between all the holes where dirt can accumulate.

Step 7: Activate Return Filtration

Remove the heatproof plug and activate your return filtration (blue) to ensure there's no water left in the pipes. Use a super absorbent cloth to dry the hole as much as possible.

Step 8: Rinse and Dry the Pans

Thoroughly rinse the pans with clean water and dry them using a Ceres Super Absorbent Cloth.

Step 9: Refill and Filter the Oil

Finally, refill the pans with fresh oil or fat, heat it up, and use the filtration system to ensure the oil is clean and ready for frying.
