What You Will Need
Ingredients | Quantity |
Natural Batter Mix, Sifted | 100g |
Cornflour | 30g |
Unsalted Butter | 100g |
Sugar | 85g |
Oats | 4tbsp |
White Chocolate Chips | 50g |
Dried Cranberries | 50g |
Method
1. Whisk together the butter and icing sugar until it's a pale and fluffy mixture. If you're using a vanilla pod, split it lengthways and scrape out the seeds, mixing them into the butter.
2. In a separate bowl, mix the Ceres Natural Batter Mix, cornflour and oats. Gradually incorporate this into the butter mix.
3. Stir in the white chocolate and cranberries. Following this, mould the dough into a cylinder shape. Wrap it in clingfilm and place it in the fridge for at least an hour.
4. Preheat your oven to 180ºC/gas mark 4.
5. Slice the dough into 1cm rounds and place on a tray lined with parchment paper. Bake for 12 to 15 minutes or until they've turned a delicate golden hue but remain soft when pressed.
6. Gently transfer the delights onto a cooling rack. Let them settle and slightly crisp up before serving.
